Hey everyone! Welcome to a new episode of Simply Natural Chinese! I'm Xiao Yue!

Hey everyone, I'm Leo.

Today we're again in my dessert shop, chatting over a cup of tea.

Leo

Xiao Yue, it's so hot right now — let me tell you something you probably wouldn't expect.

What is it?

Leo

Last weekend, my friend took me out for hotpot.

Haha, going for hotpot on a scorching hot day?

Leo

Right! I thought it was weird too — over thirty degrees, who eats hotpot?

You didn't know? In China, eating hotpot in summer is totally normal!

I know now. We sat in the restaurant with the AC on, and we still ended up sweating buckets.

Hahaha, that's the point! A lot of people love that feeling — hot outside, hot inside, the more you eat the better it feels.

Leo

And my friend ordered Chongqing hotpot — the spiciness... I almost cried.

Hahaha, a lot of foreign friends react exactly like that the first time they eat Chongqing hotpot.

So today I'd like to really talk about hotpot — I've realized that in different parts of China, hotpot is completely different.

Yeah, this topic is perfect for us. Chinese hotpot really comes in all shapes and sizes.

Leo

Then let's start with the basics. Xiao Yue, what exactly is hotpot?

Simply put, there's a pot in the middle of the table, with a flame underneath, and the soup stays hot the whole time.

Leo

And then everyone puts food in to cook it, and eats it once it's done?

Right! You can put in meat, vegetables, tofu — all kinds of things.

Leo

So you cook and eat at the same time, no waiting.

Exactly. And everyone eats together — it's lively and fun.

I really like that part. In the UK, usually everyone has their own plate and eats their own food.

When Chinese people eat, they really like sharing as a table, and hotpot is the classic example.

Leo

I get it. So let's talk about Chongqing hotpot first, since it just burned me.

Sure. Chongqing hotpot, and Sichuan hotpot, are the most famous kind, and the defining feature is one word — spicy.

Leo

Not just spicy though, right? I remember it was also numbing — that tingly feeling on your tongue.

Right! Numbing and spicy — we call it "mala." The numbing comes from something called Sichuan pepper (huajiao).

Leo

Huajiao... the thing that makes your mouth go all tingly after you eat it?

Yep, that's the one. A lot of foreign friends find it really strange the first time.

Leo

It is a bit strange, but in a kind of addictive way.

Haha, you already get it! That's how it goes for a lot of people — can't stand it at first, can't live without it later.

Leo

The pot looks all red, covered in chilies and oil, right?

Right, that's called the "red oil pot." A big pot of red oil, with chilies, Sichuan pepper, and lots of spices floating on top.

Leo

My friend also ordered a pot with a divider in the middle — red on one side, white on the other.

That's the "mandarin duck pot" (yuanyang pot)! Half spicy red broth, half non-spicy white broth.

Leo

What does yuanyang mean?

Yuanyang is a kind of bird — they're always in pairs — so in Chinese we use the word to mean "things that come as a pair."

Leo

I see. So the yuanyang pot is "a pot that's a pair" — spicy on one side, mild on the other.

Right! People who can't handle spice eat from the white side, and those who can eat from the red side.

Leo

That design is so smart. Next time I'm definitely ordering the yuanyang pot.

Haha, giving your tongue a way out.

Leo

Right! There's also a pot divided into lots of little cells, like a tic-tac-toe grid.

That's Chongqing's famous "nine-grid pot" (jiugongge)! The pot is divided into nine cells.

Leo

Why divide it into cells? Isn't the soup all the same?

The soup is the same, but each cell gets different heat — different temperatures.

Leo

So different foods go in different cells?

Right! The center cell has the highest heat, good for things you just blanch and eat — like maodu (beef tripe).

Leo

What's maodu?

Maodu is part of the cow's stomach, and it's crunchy when you eat it.

Leo

Cow stomach... okay, I'll note that down. So how do you eat it?

There's a saying, "seven up, eight down" — you hold it with chopsticks and dip it up and down in the pot seven or eight times, and it's done.

Leo

"Seven up, eight down"? Do you really have to count?

Haha, you don't actually count — it just means a few seconds is enough; leave it too long and it gets tough and not tasty.

Leo

I see. Can you use the phrase "seven up, eight down" in everyday speech too?

You can! For example, if you're feeling nervous and uneasy, you can say "my heart is going seven up, eight down."

Leo

Oh — so it also means feeling anxious and unsettled. Got it, I'll remember that.

You learn so fast.

Leo

So besides maodu, what else is a must-order at Sichuan hotpot?

Duck intestine, shrimp paste, tender beef, plus tofu skin, potato, and lotus root slices.

Leo

Lotus root slices I know — sliced lotus root, nice and crunchy.

Right, lotus root cooked briefly in the spicy pot is especially good.

Leo

So when you're eating spicy food, what do you drink with it?

A lot of people drink something called suanmeitang (sour plum drink) — sweet and sour, it cuts the heat.

Leo

That day my friend ordered me a soy milk, said it also helps with the spice.

Right — soy milk, yogurt, and ice-cold cola are all good friends when you're eating spicy.

Okay, I more or less get Chongqing hotpot. What about Beijing? What's Beijing hotpot like?

Beijing hotpot is a completely different style, called "shuan yangrou" (instant-boiled mutton).

Leo

Shuan yangrou... from the name, it's mainly about eating mutton?

Right! And the broth is clear and not spicy — just some scallions and ginger, sometimes a few red dates.

Wait — from super spicy Chongqing hotpot, suddenly to completely non-spicy Beijing hotpot?

Yeah, the difference is that big. Beijing shuan yangrou is all about the flavor of the mutton itself.

Leo

The pot looks different too, right? I think I've seen it in photos — tall in the middle.

You mean the "copper pot"! There's a chimney-like thing in the middle, with burning charcoal underneath.

Leo

Yes yes yes, that's the one! Why use that kind of pot?

Because with charcoal the soup heats up fast and stays hot longer. It's an old Beijing tradition.

Leo

So Chongqing has the red oil pot, Beijing has the copper pot — even the pots are different.

Exactly. The most important thing about Beijing shuan yangrou is the dipping sauce — sesame paste (majiang).

Leo

Majiang? Is it a sauce made from sesame?

Right, a paste ground from sesame — fragrant and thick. When Beijingers eat shuan yangrou, they must have majiang with it.

Leo

In the UK, we usually pair meat with other sauces — like mint sauce with lamb.

Haha, that's pretty different. Beijing majiang usually also has some chive flower paste and fermented bean curd mixed in.

Leo

Fermented bean curd... I've had it — kind of like a very salty, very soft cheese?

Haha, that's an interesting comparison. It's pretty much that vibe.

Leo

So besides mutton, what else do you eat with shuan yangrou?

Napa cabbage, glass noodles, frozen tofu, and a kind of baked flatbread — have one after the meat, it's so satisfying.

Leo

Sounds a lot "gentler" than Chongqing hotpot.

Right, Beijing shuan yangrou has exactly that feel — simple, light, and warm.

Leo

Is there an even lighter hotpot?

There is — head south to Guangdong, and it's a whole different thing.

Leo

What's Guangdong hotpot called?

Guangdong people don't really say "huoguo" — they say "da bianlu."

"Da bianlu"? Those three characters are so unusual. What does "da" mean here?

It's an expression from Cantonese — "da bianlu" just means eating gathered around the stove.

Leo

Oh, so "da" here doesn't really mean "to hit" — it's just a set expression.

Right, dialects have a lot of words like that — you can't take them literally.

Leo

So what does Guangdong hotpot taste like?

Super light. The broth might just be a bone soup, or with some seafood and a few slices of ginger.

Leo

Why do Guangdong people like it so light?

Because Guangdong people believe food should be eaten in its "original flavor" — the ingredient's natural taste matters most.

Leo

So they don't want strong flavors covering up the ingredients?

Right! Especially seafood — fresh shrimp, fish, shellfish — making it too spicy would actually be a waste.

Leo

I get it. So what do people usually put in da bianlu?

Lots of seafood, plus all kinds of meatballs, leafy greens, and mushrooms. And there's a really special one called "congee-base hotpot."

Leo

Congee-base hotpot? There's congee in the pot?

Right! The base is a pot of plain congee — you cook shrimp and fish in it, and at the end that congee is incredibly tasty.

Leo

I've never heard of that! Congee in the pot — that's amazing.

Guangdong people really know how to eat — trust me on this one.

Okay, next time I go to Guangdong I'm definitely trying congee-base hotpot. Are there hotpots from other places?

Of course. Have you heard of Yunnan's mushroom hotpot?

Leo

Jungu... that's all kinds of mushrooms?

Right! In Yunnan, the mountains grow tons and tons of wild mushroom varieties.

Leo

A whole pot full of mushrooms?

Yeah, dozens of different mushrooms cooked together, and the broth is unbelievably savory.

Leo

Sounds delicious, but... mixing different mushrooms together, is that safe?

Haha, you've hit the key point! Yunnan mushroom hotpot has one very important rule.

Leo

What rule?

You must cook it long enough! Some mushrooms, if undercooked, will poison you.

Leo

Poison you?! Is it serious?

Some people who eat it start seeing weird things — we joke that they "see little people."

Leo

Seeing little people... you mean it causes hallucinations?

Right, so when you eat mushroom hotpot in Yunnan, the restaurant staff keep reminding you, "cook it a bit longer, don't rush to eat it."

Leo

Wow, that's the most "dangerous" hotpot I've ever heard of.

Haha, actually as long as you cook it long enough it's fine — everyone eats it happily.

Leo

Okay, got it — Yunnan mushroom hotpot, you must be patient.

Right — "an impatient person can't eat hot tofu" — same goes for mushroom hotpot.

I learned that one too! "An impatient person can't eat hot tofu" — meaning you can't rush things.

Exactly right.

Leo

Let's count — today we've already talked about Chongqing, Beijing, Guangdong, Yunnan...

There's plenty more! Like Guizhou's sour-soup hotpot, which is sour and spicy; and Hainan's coconut chicken hotpot, made with coconut water for the broth.

Leo

Coconut water for the broth? A sweet hotpot?

Right, coconut chicken hotpot is a little bit sweet — it tastes really distinctive.

Leo

Oh my, China really has so many hotpots. One country, this many kinds of hotpot.

That's why I often say hotpot is the best way to see the tastes of different parts of China.

It's true. Northerners like mutton and sesame paste, Sichuan people like it numbing and spicy, Guangdong people like it light...

You summed it up well. One hotpot, half a map of China.

Leo

Then I want to ask one question — who do you usually eat hotpot with?

Friends, family, coworkers — anyone. Hotpot is the food best suited for "a group of people."

Leo

Why do you say that?

Because when you eat hotpot, everyone's gathered around one pot, cooking and chatting — the atmosphere is just great.

Leo

Not like Western dining, where everyone has their own plate and leaves once they're done.

Right, you can spend two or three hours on hotpot — eat slowly, chat slowly.

Leo

So in China, when friends want to get together, they often say, "come on, let's go for hotpot"?

Exactly! "Going for hotpot" is almost the same as "having a proper get-together."

Leo

And what about going alone? Can one person eat hotpot?

In the past, eating hotpot alone was a bit odd, but it's different now.

Leo

How is it different?

Now there are lots of "mini hotpot" places — each person gets their own small pot, perfect for eating alone.

Leo

Oh, the one-small-pot-per-person kind — I've seen those!

Right, young people love them now — you can have a great meal on your own.

That's a nice thing. In the UK, going to a restaurant alone is totally normal, but in China, people used to think, "why are you on your own?"

Right, that attitude is fading more and more. Eating hotpot alone is its own kind of enjoyment.

Leo

I agree. Sometimes you just want to eat quietly by yourself.

And with a mini hotpot you pick your own broth and your own food — no need to accommodate anyone else.

Leo

Haha, true. When you eat with someone who can handle spice, the one who can't has a rough time.

That's exactly why the yuanyang pot is so popular.

Leo

Coming back to it, I've noticed hotpot has another good point — it's very "inclusive."

How so?

You put in whatever you want and skip what you don't like. Everyone can find something they enjoy.

Right! I totally agree with that. There's no "right or wrong" with hotpot — as long as you like it, it's good.

In the UK, dining sometimes has a lot of rules — I really like this "free" feeling that hotpot has.

Haha, you're welcome to eat lots more hotpot from now on.

Leo

So... can I ask, which kind of hotpot is your favorite?

I'm from Hangzhou, and honestly hotpot isn't really our "home turf," but personally I like mushroom hotpot best.

Leo

Why? Because it's "dangerous"?

Haha, no. It's because it's so savory, not spicy, and you don't feel sick afterward.

As for me... I'm still a bit scared of spice, but I think Chongqing hotpot is the most interesting.

Once you can handle spice, you'll fall in love with it.

Leo

Haha, give me some time. By the way, is there anything to watch out for when eating hotpot?

Yes! First, if you eat hotpot that's too spicy, you might feel bad the next day — don't overdo it.

Leo

I've got experience with that one...

Second, after hotpot the smell gets all over your clothes and hair — better not wear your nice clothes.

Leo

Haha, that's so true! When I got home that day, my mom said I "smelled like hotpot all over."

That's why a lot of hotpot places give you a bag to put your coat in.

Leo

So thoughtful. Anything else?

Third, meat must be fully cooked — especially chicken and offal — don't rush it just to be quick.

Leo

Got it, safety first.

Right — eat happily, but eat healthily too.

Leo

We've talked about so much today — I feel like my understanding of hotpot is completely different now.

Then let's do a quick recap. Today we talked about...

Chongqing and Sichuan's mala hotpot — the red oil pot, the yuanyang pot, the nine-grid pot — and "seven up, eight down" for blanching tripe.

Beijing's shuan yangrou — copper pot, clear broth, with sesame paste.

Leo

Guangdong's da bianlu — light, seafood-focused, plus the amazing congee-base hotpot.

Yunnan's mushroom hotpot — you must cook it long enough; "an impatient person can't eat hot tofu."

And Guizhou's sour soup, Hainan's coconut chicken... China's hotpot is really so rich and varied.

And we learned a phrase — "one hotpot, half of China" — you can see the tastes of every region just from hotpot.

Leo

I think my biggest takeaway today is that I'm not afraid of hotpot anymore... except the spicy kind.

Haha, take your time. If you love hotpot too, let us know in the comments below — which kind is your favorite?

Yeah, and tell us what your first time eating hotpot felt like — did you almost cry like I did?

That's all for today — thanks everyone for listening to Simply Natural Chinese!

Leo

See you next time!

Bye-bye!
